Temperature: Keep It Cool (But Not Too Cool)


Consistency is king.

  • Store Big Boy Ice between 0°F and 20°F
  • Ideal temperature: right around 0°F


If your freezer creeps above 20°F, your ice may start to soften or lose its shape—nobody wants a sad cube. But don’t go too far in the other direction either. Temperatures below 0°F can make ice brittle and increase tempering time before use.

Cold, steady, and controlled. Just like a good bartender.


Placement: Ice Has a Nose


Ice is polite, but it remembers everything.


Big Boy Ice can absorb odors and flavors from nearby foods, so always store it in a sealed, closed container. A secure bag or airtight container (like our Big Boy Ice bags) keeps your ice tasting exactly like… nothing at all. Which is the goal.

Your ice should never smell like leftovers.


Refreezing: Totally Allowed


Good news: tempered Big Boy Ice can absolutely be refrozen.


A few rules to live by:

  • Store refrozen ice again between 0°F and 20°F
  • Always re-temper before using it in a drink


To avoid cubes sticking together, store them separately whenever possible. Refreezing tempered ice can cause bonding, but that’s nothing a little finesse can’t fix.

If cubes do stick:

  • Gently use an ice pick or knife along the seam
  • Let the metal do the work—ice will split naturally
  • Do not smash or hit the cubes (this isn’t that kind of ice)



Final Tip

Big Boy Ice is tough, but it’s also refined. Treat it right and it’ll reward you with slower dilution, better-looking drinks, and a noticeably elevated cocktail experience.


Tempering

Tempering is the final—and very important—step before Big Boy Ice hits the glass. Straight-from-the-freezer ice is too cold and too tense. If it hasn’t been tempered properly, sudden contact with liquid can cause cracking, which messes with both performance and looks.


Nobody wants a fractured cube.


Tempering also works a little magic on ice that’s gone frosty or slightly freezer burnt. A proper warm-up can restore that signature crystal-clear clarity Big Boy Ice is known for.


How to Temper Ice


Tempering simply means letting your ice gently come up to temperature.

You can temper Big Boy Ice in:

  • refrigerator
  • An ice well
  • Open air on a clean surface

You’ll know it’s ready when the ice becomes clear, slightly wet, and glossy.


Timing depends on how cold your freezer is and how much ice you’re tempering, but as a general rule:

  • Plan on about 5 minutes per cube


In just a few minutes, your ice will relax, settle in, and look its best.
